- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar

- 1 cup vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, sift together the flour, sugar, baking soda, salt, cocoa powder, and set aside.
- In another bowl, mix the oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fill each cupcake liner about 2/3 full with batter.
- Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely before frosting them.
Notes
- For a richer flavor, allow the cupcakes to sit for a day before serving.
