Ingredients

- 1 cup fresh raspberries
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup strong brewed coffee, cooled
- 1 package ladyfinger cookies
- 2 tablespoons cocoa powder
Instructions
- In a mixing bowl, combine mascarpone cheese, heavy cream, sugar, and vanilla extract. Beat until soft peaks form.
- Dip ladyfinger cookies quickly in coffee and layer them at the bottom of a dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Add a layer of fresh raspberries on top.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Dust with cocoa powder and refrigerate for at least 4 hours before serving.
Notes
- For a stronger coffee flavor, let the coffee cool longer before dipping the ladyfingers.
- Feel free to substitute raspberries with other berries if desired.
