  • 1 cup fresh raspberries
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee, cooled
  • 1 package ladyfinger cookies
  • 2 tablespoons cocoa powder

Instructions

  1. In a mixing bowl, combine mascarpone cheese, heavy cream, sugar, and vanilla extract. Beat until soft peaks form.
  2. Dip ladyfinger cookies quickly in coffee and layer them at the bottom of a dish.
  3. Spread half of the mascarpone mixture over the ladyfingers.
  4. Add a layer of fresh raspberries on top.
  5. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  6. Dust with cocoa powder and refrigerate for at least 4 hours before serving.

Notes

  • For a stronger coffee flavor, let the coffee cool longer before dipping the ladyfingers.
  • Feel free to substitute raspberries with other berries if desired.
