Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the flour, butter, and powdered sugar until the mixture resembles crumbs.
- Add the egg yolk and vanilla extract and mix until a dough forms.
- Roll out the dough and cut into rectangles.
- Bake for 12-15 minutes or until golden brown.
- Cool completely before assembling with raspberry jam and whipped cream.
Notes
- For extra flavor, add lemon zest to the cream.
- Make sure cookies are fully cooled before adding toppings to prevent melting.
