- 1 cup quinoa
- 2 cups water
- 1 apple, diced
- 1/2 cup dried cranberries
- 1/4 cup walnuts, chopped
- 2 tablespoons honey
- 2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water, bring to a boil.
- Reduce to a simmer, cover, and cook for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a bowl, mix cooled quinoa, apple, cranberries, and walnuts.
- In a small bowl, whisk together honey, lemon juice, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Serve chilled or at room temperature.

- Can substitute maple syrup for honey for a vegan option.
