Ingredients

  • 1 cup quinoa
  • 2 cups water

  • 1/4 teaspoon black pepper

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water, bring to a boil.
  3. Reduce to a simmer, cover, and cook for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a bowl, mix cooled quinoa, apple, cranberries, and walnuts.
  6. In a small bowl, whisk together honey, lemon juice, salt, and pepper.
  7. Pour dressing over salad and toss to combine.
  8. Serve chilled or at room temperature.
