- 4 medium zucchinis
- 2 cups marinara sauce
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt to taste
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis into thin rounds.
- In a baking dish, layer half of the marinara sauce.
- Layer half of the zucchini slices on top of the sauce.
- Sprinkle half of the Parmesan and mozzarella cheese over the zucchini.
- Repeat the layers with the remaining marinara sauce, zucchini, and cheeses. Season with garlic powder, Italian seasoning, salt, and black pepper.
- Bake in the preheated oven for 25-30 minutes or until the zucchini is tender and the cheese is bubbling.
- Allow to cool slightly before serving.
Notes
- This casserole can be prepped ahead of time and stored in the refrigerator before baking.
- Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
