Ingredients

- 1 cup pistachios, shelled and chopped
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1 cup brewed espresso, cooled
- 20 ladyfinger cookies
- 2 tablespoons cocoa powder
Instructions
- In a mixing bowl, combine the mascarpone cheese, heavy cream, sugar, and vanilla extract, and beat until fluffy.
- In a separate bowl, dip ladyfinger cookies into the cooled espresso and layer at the bottom of a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Sprinkle half of the chopped pistachios over the mascarpone layer.
- Add another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
- Top with cocoa powder and the rest of the pistachios.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a stronger flavor, use dark chocolate cocoa powder.
- You can substitute crushed nuts for garnishing if desired.
