- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1 can (20 oz) sliced pineapple, drained
- Maraschino cherries (for decoration)
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a round cake pan, melt the butter and sprinkle the brown sugar evenly over it.
- Arrange the pineapple slices over the brown sugar, placing a cherry in the center of each slice.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, combine the buttermilk, eggs, granulated sugar, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Pour the batter into the prepared cake pan over the pineapple.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let it cool for a few minutes before inverting it onto a serving plate.
Notes
- For best results, use fresh pineapple.
- Serve warm or at room temperature with whipped cream.
