- 1 cup peaches, diced
- 1/2 cup cream cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
- Add the melted butter, eggs, and vanilla extract; mix until combined.
- Fold in peaches and cream cheese until evenly distributed.
- Spoon the mixture into a muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool before serving.
Notes
- For a twist, try adding cinnamon to the batter.
- These mini pies can be enjoyed warm or cold.
