- 1 1/2 cups fresh peaches, diced
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the melted butter, sour cream, eggs, and vanilla until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the diced peaches.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
- For a sweeter muffin, you can add a tablespoon of cinnamon.
