Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together melted butter, eggs, vanilla extract, and milk.
  4. Combine the wet and dry ingredients, mixing until just blended. Fold in the diced peaches.
  5. Fill the muffin cups about 2/3 full with batter.
  6. Bake for 20-25 minutes, or until a toothpick comes out clean.
  7. Allow to cool for a few minutes before transferring to a wire rack.

Notes

  • To enhance peach flavor, you can add a pinch of cinnamon.
