- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- 2 cups diced fresh peaches
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together flour, sugar, baking powder, and salt.
- In another bowl, whisk together melted butter, eggs, vanilla extract, and milk.
- Combine the wet and dry ingredients, mixing until just blended. Fold in the diced peaches.
- Fill the muffin cups about 2/3 full with batter.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
Notes
- To enhance peach flavor, you can add a pinch of cinnamon.
- Make sure not to overmix the batter to keep the muffins tender.
