- 2 fillets of salmon
- 1 cup orzo
- 2 cups vegetable broth
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 cup spinach (fresh)
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add garlic and sauté until fragrant.
- Add orzo and vegetable broth; bring to a boil.
- Reduce heat and stir in lemon juice and zest.
- Place salmon fillets on top and cover, cooking until salmon is done.
- Stir in fresh spinach just before serving.
Notes
- This dish can be made with frozen salmon; simply increase cooking time.
- Feel free to add other vegetables like peas or asparagus.
