- 1 cup brown rice
- 2 cups vegetable broth
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion and bell pepper, and sauté until softened.
- Add the garlic and spices, cooking for an additional minute.
- Stir in the brown rice, then add the vegetable broth and black beans.
- Bring to a boil, then reduce heat to low and cover. Cook for 40-45 minutes until rice is tender.
- Remove from heat and let it sit for 5 minutes before fluffing with a fork.

- This dish can be easily customized with your favorite vegetables.
- For extra flavor, consider adding lime juice or fresh cilantro before serving.
