One Pot Mexican Brown Rice: Easy, Flavorful Comfort Food

Ingredients

  • 2 cups vegetable broth
  • 1 bell pepper, diced

  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and bell pepper, and sauté until softened.
  2. Add the garlic and spices, cooking for an additional minute.
  3. Stir in the brown rice, then add the vegetable broth and black beans.
  4. Bring to a boil, then reduce heat to low and cover. Cook for 40-45 minutes until rice is tender.
  5. Remove from heat and let it sit for 5 minutes before fluffing with a fork.
