- 1 pound chicken breast, diced
- 12 ounces gnocchi
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup peas
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and Pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned.
- Add onion, garlic, carrots, and celery; sauté until vegetables are tender.
- Stir in the chicken broth, heavy cream, thyme, and rosemary.
- Add gnocchi and peas, stirring to combine all ingredients.
- Simmer for 10-15 minutes until gnocchi is cooked and the sauce has thickened.
- Season with salt and pepper to taste before serving.
Notes
- This dish can also be topped with biscuits before baking for added texture.
- Feel free to add any other vegetables you enjoy.
