- 1 pound chicken breast
- 8 ounces fettuccine
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1 bell pepper, diced
- 1 onion, diced
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup parsley, chopped
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and bell pepper, and sauté until softened.
- Stir in garlic and cook for another minute.
- Add chicken breast and season with salt, pepper, and Cajun seasoning. Cook until browned.
- Pour in chicken broth and bring to a simmer.
- Add fettuccine and heavy cream, stirring to combine.
- Cover and cook until pasta is al dente, about 10-12 minutes.
- Stir in chopped parsley before serving.
Notes
- For a vegetarian version, substitute chicken with mushrooms.
- Cut down on the Cajun seasoning if you prefer it milder.
