- 1 cup pineapple, diced

Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chicken thighs and season with chili powder, cumin, paprika, salt, and pepper.
- Cook for about 6-8 minutes on each side until fully cooked.
- Remove chicken, let it rest for a few minutes, then chop into bite-sized pieces.
- In the same skillet, warm the tortillas until pliable.
- Assemble the tacos with chicken and top with pineapple salsa made by combining pineapple, red onion, cilantro, and lime juice.
- Serve immediately.
Notes
- For extra flavor, marinate the chicken in spices for at least 30 minutes.
- Adjust the spice level by adding more chili powder if desired.
