  • 8 corn tortillas
  • 1 cup pineapple, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chicken thighs and season with chili powder, cumin, paprika, salt, and pepper.
  3. Cook for about 6-8 minutes on each side until fully cooked.
  4. Remove chicken, let it rest for a few minutes, then chop into bite-sized pieces.
  5. In the same skillet, warm the tortillas until pliable.
  6. Assemble the tacos with chicken and top with pineapple salsa made by combining pineapple, red onion, cilantro, and lime juice.
  7. Serve immediately.
