Instructions
- In a bowl, whisk together eggs, salt, and pepper.
- Heat a skillet over medium heat and add turkey bacon. Cook until crispy.
- Add onions and chili to the skillet, sautéing until translucent.
- Stir in tomatoes and cook for another 2 minutes.
- Pour the egg mixture over the vegetables in the skillet.
- Cook until the eggs are set and slightly golden on the bottom.
- Fold the omelette in half and garnish with cilantro before serving.
Notes
- For a spicier version, increase the number of green chilies.
- Feel free to add cheese for extra flavor.
