Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the oil, eggs, grated carrots, and vanilla extract.
- Combine the wet and dry ingredients and pour into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool and frost as desired.

- For extra flavor, add nuts or raisins to the batter.
- Top with cream cheese frosting for a classic touch.
