- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 2 cups fresh blueberries
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the melted butter, milk, and eggs.
- Combine the wet and dry ingredients and fold in the blueberries gently.
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let them cool for a few minutes before transferring to a wire rack.
Notes
- For extra moisture, add a little yogurt to the batter.
- You can use frozen blueberries, just do not thaw them before adding.
