- 1 cup pecans, chopped
- 1/2 cup brown sugar
- 1/4 cup corn syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 package mini pastry shells
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the chopped pecans, brown sugar, corn syrup, eggs, vanilla extract, and salt.
- Place the mini pastry shells on a baking sheet.
- Spoon the pecan mixture into each pastry shell.
- Bake for 20-25 minutes or until the filling is set.
- Allow to cool before serving.
Notes
- These pies can be stored for up to 3 days at room temperature.
- For added flavor, consider adding a splash of bourbon to the filling.
