- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup blueberries
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tablespoons lemon juice

- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour and powdered sugar. Then blend in the butter until the mixture resembles coarse crumbs.
- Press the mixture into a muffin tin to form the tart crusts.
- Bake for 15 minutes and let cool.
- In another bowl, combine blueberries, granulated sugar, eggs, lemon juice, lemon zest, and salt.
- Pour the filling into the cooled tart crusts.
- Bake for an additional 20-25 minutes until set.
- Let cool before serving.
Notes
- These tarts can be served warm or chilled.
- For a decorative touch, add whipped cream on top before serving.
