- 2 ripe bananas
- 1/3 cup melted butter
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 pinch salt
- 1 cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with liners.
- In a mixing bowl, mash the ripe bananas, then stir in the melted butter.
- Mix in the sugar, egg, and vanilla extract.
- Sprinkle the baking soda and salt over the mixture and mix.
- Stir in the flour until just combined.
- Fill the muffin cups to about 3/4 full.
- Bake for 15-20 minutes until a toothpick comes out clean.
- Let cool before serving.
Notes
- For extra flavor, consider adding chocolate chips or nuts.
- These muffins can be frozen for later enjoyment.
