- 2 pounds flank steak
- 1 cup Mexican Coca-Cola
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1 onion, sliced
- 1 bell pepper, sliced
- 8 small flour tortillas
Instructions
- In a large bowl, combine the Coca-Cola, soy sauce, garlic, cumin, chili powder, black pepper, and salt.
- Add the flank steak to the marinade, cover, and refrigerate for at least 2 hours or overnight.
- Remove the steak from the marinade and discard the marinade.
- Grill the steak over medium-high heat for about 6-7 minutes on each side, or until desired doneness.
- Let the steak rest, then slice thinly against the grain.
- In a skillet, sauté the onion and bell pepper until tender.
- Serve the sliced steak and veggies in tortillas, and enjoy!

- For extra flavor, add avocado slices or your choice of salsa.
- Use corn tortillas for a gluten-free option.
