- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1/2 teaspoon pepper
- 1/2 cup heavy cream
- 1 cup noodles (optional)
Instructions
- In a large pot, heat some oil over medium heat.
- Add onions, garlic, carrots, and celery. Sauté until tender.
- Pour in chicken broth and bring to a boil.
- Add the shredded chicken, thyme, oregano, and pepper. Simmer for 20 minutes.
- If using, add the noodles and cook according to package directions.
- Stir in the heavy cream and adjust seasoning as needed. Serve hot.
Notes
- This soup can be easily customized with your favorite vegetables.
- For a spicy kick, add a pinch of red pepper flakes.
