Ingredients

- 2 cups cooked chicken, shredded
- 1 cup turkey bacon, chopped
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onions, diced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup parsley, chopped
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onions, carrots, and celery, and sauté until soft.
- Stir in garlic, thyme, salt, and pepper, and cook for an additional minute.
- Add chicken broth and bring to a boil.
- Add shredded chicken and turkey bacon, then reduce heat and let it simmer for 20 minutes.
- Stir in parsley before serving.
Notes
- This soup can be made a day ahead for better flavor.
- Adjust seasoning to taste before serving.
