- 1 tablespoon olive oil
- 4 slices turkey bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, diced
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1/4 cup fresh parsley, chopped
Instructions
- In a large pot, heat olive oil over medium heat.
- Add turkey bacon and cook until crispy.
- Stir in onion and garlic, cooking until softened.
- Add carrots and celery, and sauté for a few minutes.
- Pour in chicken broth and bring to a boil.
- Reduce heat and add cooked chicken, thyme, salt, and pepper.
- Simmer for 15 minutes.
- Stir in heavy cream and parsley before serving.
Notes
- For a thicker soup, blend a portion of it and stir back in.
- Substitute chicken with turkey for a lighter option.
