- 1 pound chicken breast
- 4 slices turkey bacon
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
Instructions
- Cook the turkey bacon in a large pot until crispy. Remove and set aside.
- In the same pot, sauté the onions, carrots, and celery until soft.
- Add garlic and cook for 1 minute.
- Pour in the chicken broth and add the chicken breast.
- Season with thyme, rosemary, salt, and pepper.
- Simmer until the chicken is cooked through, then shred it.
- Stir in the heavy cream and crumbled turkey bacon. Heat through.

- For a healthier version, use low-fat cream.
