- 1 pound chicken breast
- 4 cups chicken broth
- 2 cups carrots, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 1 teaspoon garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1/4 cup fresh parsley, chopped
Instructions
- In a large pot, heat some oil over medium heat and sauté the onions, carrots, and celery until softened.
- Add the minced garlic and cook for another minute.
- Pour in the chicken broth and bring to a simmer.
- Add the chicken breast, thyme, basil, salt, and pepper, and cook until the chicken is tender.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the heavy cream and fresh parsley before serving.
