- 2 pounds chicken breast
- 12 ounces penne pasta
- 1 teaspoon Italian seasoning
- 2 cups heavy cream
- 1 cup parmesan cheese, grated
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup sun-dried tomatoes, chopped
- 2 cups spinach, fresh
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add garlic and sauté until fragrant.
- Season chicken with Italian seasoning, salt, and pepper, then add to the skillet.
- Cook chicken until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, add heavy cream and bring to a simmer.
- Stir in parmesan cheese until melted and creamy.
- Add sun-dried tomatoes and spinach, and mix well.
- Return the chicken to the skillet and toss to combine.
- Finally, add the cooked pasta and mix until evenly coated.
- Serve warm and enjoy!
Notes
- For a spicier kick, add red pepper flakes to taste.
- This dish is best served immediately, but can be reheated.
