Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix olive oil, maple syrup, Dijon mustard, salt, and black pepper.
- Add the carrots to the bowl and toss to coat them in the mixture.
- Spread the carrots in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized.
