Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, whisk together maple syrup, Dijon mustard, olive oil, salt, and pepper.
- Add the carrot sticks to the bowl and toss until they are evenly coated.
- Spread the carrots on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
- Serve warm as a side dish.
