Ingredients
Scale
- 2 large eggs
- 1 tablespoon butter
- Salt to taste
- Black pepper to taste
- Fresh chives for garnish
Instructions
- Crack the eggs into a bowl and add a pinch of salt.
- Whisk the eggs until the yolks and whites are fully combined.
- In a non-stick pan, add the butter and let it melt over medium heat.
- Pour the eggs into the pan and stir gently with a spatula.
- Remove from heat when the eggs are slightly undercooked, then let them sit for a moment to finish cooking off heat.
- Season with salt and pepper, and garnish with fresh chives before serving.
Notes
- Cook on low heat for the best texture.
- Gordon Ramsay recommends stirring the eggs constantly while cooking.
- Letting the pan cool slightly off the heat helps achieve creaminess.
