Ingredients

  • 1 pound gnocchi
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 1 cup spinach
  • 1 cup parmesan cheese, grated

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. Sauté the onion and garlic in the bacon fat until translucent.
  3. Add the chicken ham and cook for another 2 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the gnocchi and cook according to package instructions.
  6. Stir in the heavy cream, thyme, black pepper, and spinach. Simmer for 5 minutes.
  7. Remove from heat and stir in the parmesan cheese before serving.

Notes

  • Feel free to substitute with your favorite greens.
  • Top with extra parmesan for more flavor.
