- 8 ounces mushrooms sliced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon thyme dried
- Salt and Pepper to taste
- 1/4 cup fresh parsley chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic; sauté until softened.
- Add the sliced mushrooms and cook until they release their moisture.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and stir in the heavy cream and thyme.
- Season with salt and pepper.
- Simmer for 10-15 minutes.
- Garnish with fresh parsley before serving.
