- 4 large russet potatoes
- 1/2 cup chopped turkey bacon
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
Instructions
- In a large pot, cook turkey bacon until crispy. Remove and set aside.
- In the same pot, sauté onion and garlic until translucent.
- Add diced potatoes and chicken broth. Bring to a boil and simmer until potatoes are tender.
- Use a potato masher to blend the soup slightly for a creamy texture.
- Stir in heavy cream, salt, and pepper. Heat through.
- Serve topped with crispy bacon, cheese, and green onions.
Notes
- For a vegetarian version, omit bacon and use vegetable broth.
