Ingredients

- 1 tablespoon olive oil
- 1 pound chicken breast, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 lemon, juiced
- 1 cup orzo pasta
- 2 cups spinach
- salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chicken, onion, carrots, and celery. Cook until the chicken is no longer pink.
- Stir in the garlic, chicken broth, thyme, and oregano. Bring to a boil.
- Add the orzo and cook until tender, about 8-10 minutes.
- Stir in the spinach and lemon juice. Season with salt and pepper.
- Serve hot and enjoy!
Notes
- This soup can be made ahead of time and stored in the refrigerator.
- Add extra lemon juice for more tartness.
