- 1 cup orzo pasta
- 4 cups chicken broth
- 2 cups spinach, chopped
- 1 lemon, juiced
- 2 carrots, diced
- 1 onion, chopped

- 1 teaspoon dried thyme
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced chicken and cook until browned.
- Stir in the carrots, onion, and garlic; sauté until tender.
- Add the chicken broth, orzo, thyme, and bring to a boil.
- Reduce heat and let simmer until the orzo is cooked.
- Stir in spinach and lemon juice before serving.

- This soup can be made in advance and tastes great the next day.
- Add extra lemon juice for a zesty kick.
