- 1 tablespoon olive oil
- 1 onion diced
- 2 cloves garlic minced
- 1 pound chicken breast
- 4 cups chicken broth
- 1 cup orzo pasta
- 2 cups spinach
- 1 lemon juiced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until soft.
- Add the chicken breast and cook until browned.
- Pour in the chicken broth and bring to a boil.
- Add the orzo pasta and cook until tender.
- Stir in the spinach, lemon juice, thyme, salt, and pepper.
- Cook for an additional 2-3 minutes before serving.
Notes
- For a creamier soup, add a splash of heavy cream at the end.
- This soup keeps well for a few days in the refrigerator.
