- 2 large eggs

- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, combine flour, baking powder, baking soda, and salt.
- In another bowl, beat together the butter and sugar until light and fluffy.
- Add the eggs, vanilla, lemon juice, and lemon zest to the butter mixture and mix until combined.
- Gradually add the dry ingredients and mix just until combined.
- Fold in the blueberries gently.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- For an extra lemon flavor, drizzle a lemon glaze on top after baking.
- This bread can be enjoyed warm or at room temperature.
