- 2 cups ricotta cheese
- 2 cups marinara sauce
- 1 pound zucchini, sliced
- 1 pound eggplant, sliced
- 1 cup bell peppers, chopped
- 1 cup spinach, chopped
- 3 cups lasagna noodles
- 1 cup mozzarella cheese, shredded
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, spread a thin layer of marinara sauce.
- Layer noodles, ricotta cheese, vegetables, and marinara sauce. Repeat layers.
- Top with mozzarella cheese and herbs.
- Bake covered for 30 minutes, then uncover and bake for an additional 15 minutes.
- Let it cool for a few minutes before serving.
