Lasagna Soup: Easy Comfort Food With Turkey Bacon and Beef

Ingredients

  • 1 pound ground beef
  • 4 slices turkey bacon
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and chop.
  2. In the bacon fat, cook ground beef until browned.
  3. Add onion and garlic, cooking until softened.
  4. Stir in crushed tomatoes, broth, and Italian seasoning. Bring to a boil.
  5. Add broken lasagna noodles and cook according to package instructions.
  6. Stir in ricotta cheese and half the mozzarella until melted.
  7. Top with remaining mozzarella and Parmesan before serving.

Notes

  • For an extra kick, add red pepper flakes.
  • Garnish with fresh basil for added flavor.
