- 4 large eggs
- 2 tablespoons mayonnaise
- 2 slices white bread
- 2 slices turkey bacon
- Salt to taste
- Black pepper to taste
Instructions
- Cook the turkey bacon until crispy. Set aside.
- In a bowl, whisk the eggs with salt and pepper until well combined.
- Scramble the eggs in a non-stick pan over medium heat.
- Once cooked, mix in mayonnaise until creamy.
- Layer the egg mixture on one slice of bread and top with turkey bacon.
- Cover with the second slice of bread and cut into halves before serving.
Notes
- For extra flavor, add a dash of soy sauce to the eggs.
- This sandwich is best served fresh.
