- 1 pound turkey bacon
- 1 pound chicken ham
- 4 cups chicken broth
- 2 cups fresh spinach
- 1 cup small pasta (like acini di pepe)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup grated Parmesan cheese
Instructions
- In a large pot, cook the turkey bacon until crispy. Remove and chop into pieces.
- In the same pot, sauté the onion and garlic until translucent.
- Add the chicken broth, turkey bacon, and chicken ham to the pot.
- Bring to a simmer and add the pasta.
- Cook until pasta is al dente, then stir in spinach and seasonings.
- Serve hot with grated Parmesan on top.
Notes
- This soup can be made ahead of time and tastes even better the next day.
- Adjust the amount of spices to your preference.
