Instructions
- Cook rice noodles according to package instructions and set aside.
- In a large skillet, cook turkey bacon until crispy, then remove and chop.
- Add olive oil to the skillet and sauté garlic until fragrant.
- Add bell peppers and green onions, cooking until just tender.
- Stir in cooked noodles, chopped bacon, soy sauce, fish sauce, sriracha, and lime juice; mix well.
- Serve hot, garnished with fresh cilantro.

- Adjust the level of spice by varying the amount of sriracha.
- For a vegetarian option, substitute turkey bacon with tempeh or mushrooms.
