  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups elbow macaroni
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the beef and brown on all sides.
  2. Add the onion and garlic, cooking until the onion is translucent.
  3. Stir in beef broth, diced tomatoes, tomato paste, paprika, oregano, salt, and pepper. Bring to a simmer.
  4. Cover and cook for 1.5 to 2 hours, or until beef is tender.
  5. Stir in elbow macaroni and cook until tender, about 8-10 minutes.
  6. Remove from heat and stir in cheddar cheese until melted.
