- 2 pounds beef chuck, cut into cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups elbow macaroni
- 1 cup shredded cheddar cheese
Instructions
- In a large pot, heat olive oil over medium heat. Add the beef and brown on all sides.
- Add the onion and garlic, cooking until the onion is translucent.
- Stir in beef broth, diced tomatoes, tomato paste, paprika, oregano, salt, and pepper. Bring to a simmer.
- Cover and cook for 1.5 to 2 hours, or until beef is tender.
- Stir in elbow macaroni and cook until tender, about 8-10 minutes.
- Remove from heat and stir in cheddar cheese until melted.
Notes
- For extra flavor, add a splash of Worcestershire sauce.
- Serving with a side of crusty bread enhances the meal.
