- 2 tablespoons butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups seafood stock
- 1 cup heavy cream
- 1 cup crab meat
- 1 teaspoon Old Bay seasoning
- Salt to taste
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh parsley, chopped
Instructions
- Set the Instant Pot to sauté mode and melt the butter. Add onions and garlic, sauté until soft.
- Sprinkle flour over the mixture and cook for an additional 2 minutes.
- Slowly whisk in the seafood stock, ensuring there are no lumps.
- Add the heavy cream, crab meat, Old Bay seasoning, and salt. Stir to combine.
- Close the lid and set to cook on high pressure for 10 minutes.
- Once done, quick-release the pressure and stir in lemon juice and parsley before serving.
Notes
- For a thicker soup, add more flour or reduce the seafood stock.
