Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 cup crab meat
  • 1 teaspoon Old Bay seasoning
  • Salt to taste
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Set the Instant Pot to sauté mode and melt the butter. Add onions and garlic, sauté until soft.
  2. Sprinkle flour over the mixture and cook for an additional 2 minutes.
  3. Slowly whisk in the seafood stock, ensuring there are no lumps.
  4. Add the heavy cream, crab meat, Old Bay seasoning, and salt. Stir to combine.
  5. Close the lid and set to cook on high pressure for 10 minutes.
  6. Once done, quick-release the pressure and stir in lemon juice and parsley before serving.

Notes

  • For a thicker soup, add more flour or reduce the seafood stock.
