- 1 pound Italian sausage
- 1 cup lentils
- 1 onion diced
- 3 cloves garlic minced
- 2 carrots diced
- 2 celery stalks diced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
Instructions
- Set your Instant Pot to sauté mode. Add the sausage and cook until browned, breaking it apart as it cooks.
- Add the onion, garlic, carrots, and celery to the pot, and cook until the vegetables soften.
- Stir in the lentils, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper.
- Seal the pot, set it to manual high pressure for 15 minutes.
- Once cooking is complete, do a quick release. Stir the soup and adjust seasoning if needed.
- Serve hot and enjoy!

- For a spicier soup, use spicy Italian sausage.
- This soup can be easily customized with your favorite vegetables.
