- 1 whole chicken
- 8 cups chicken broth
- 2 cups egg noodles
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon parsley
- Salt and pepper to taste
Instructions
- In a large pot, place the whole chicken and cover it with chicken broth.
- Bring the broth to a boil and then reduce to a simmer.
- Add the chopped onion, carrots, celery, and minced garlic.
- Season with thyme, parsley, salt, and pepper.
- Simmer until the chicken is cooked through, about 1 hour.
- Remove the chicken, shred the meat, and return it to the pot.
- Add egg noodles and cook according to package instructions.
Notes
- For a richer flavor, allow the soup to sit for a while before serving.
- This soup can also be made in a slow cooker for easy preparation.
