Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and garlic, and sauté until softened.
- Stir in the mushrooms and cook until they release their moisture.
- Add the lentils, diced tomatoes, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 30-40 minutes.
- Check the lentils for tenderness and adjust seasoning as needed.
Notes
- For added flavor, consider adding a splash of soy sauce.
- This stew can be made in advance and tastes even better the next day.
