Ingredients

  • 1 pound ground turkey
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion diced
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 2 cups diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt to taste
  • Pepper to taste
  • 2 cups chopped spinach

Instructions

  1. In a large pot, cook ground turkey over medium heat until browned.
  2. Add carrots, celery, onion, and garlic; sauté until the vegetables are tender.
  3. Pour in the chicken broth and diced tomatoes.
  4. Stir in thyme, basil, salt, and pepper.
  5. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
  6. Add spinach and cook for an additional 5 minutes.

Notes

  • For a thicker soup, add a tablespoon of flour mixed with some broth.
  • This recipe is easily adaptable; feel free to add any vegetables you have on hand.
