- 1 pound ground turkey
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 onion diced
- 3 cloves garlic minced
- 6 cups chicken broth
- 2 cups diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt to taste
- Pepper to taste
- 2 cups chopped spinach
Instructions
- In a large pot, cook ground turkey over medium heat until browned.
- Add carrots, celery, onion, and garlic; sauté until the vegetables are tender.
- Pour in the chicken broth and diced tomatoes.
- Stir in thyme, basil, salt, and pepper.
- Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
- Add spinach and cook for an additional 5 minutes.
Notes
- For a thicker soup, add a tablespoon of flour mixed with some broth.
- This recipe is easily adaptable; feel free to add any vegetables you have on hand.
