- 1 pound boneless, skinless chicken breasts
- 2 medium sweet potatoes, diced
- 1 cup brown rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, smoked paprika, garlic powder, salt, and pepper.
- Toss the diced sweet potatoes in the mixture and spread them on a baking sheet.
- Bake for 25-30 minutes or until tender.
- While the sweet potatoes are baking, cook the brown rice in chicken broth according to package instructions.
- Season the chicken breasts with salt and pepper, then grill or pan-sear until cooked through, about 7-8 minutes per side.
- Slice the chicken and combine it with the cooked rice and roasted sweet potatoes.
- Garnish with chopped parsley before serving.
